Cod Fish Cakes

1 lb cod fillets
2 med. potatoes
1 cup breadcrumbs
1/4 cup chopped fresh parsley
2 tbsp Parmesan cheese, freshly grated
2 garlic cloves, finely chopped
1 tsp salt
1/2 tsp pepper
2 eggs, lightly beaten
Canola oil, for frying
Boil and mash potatoes, set aside. Boil cod until it flakes easily. Drain and flake the fish with a fork. Remove any bones. Mix flaked fish, potatoes and the rest of the ingredients (except oil) together by hand. Form the mixture into cakes and fry them on medium-high heat in a skillet coated with oil.
