Steak Sandwich

12 oz boneless beef rib-eye steak
2 tbsp butter
2 med white onions, thinly sliced and separated into rings
1 med. red or green pepper, cut into thin strips
4 French rolls, split
4 oz thinly sliced cheddar cheese
Thinly slice steak into bite-sized strips. In a skillet, melt butter and add onions and pepper; cover and cook over medium-low heat for 10 min., stirring occasionally. Remove from skillet with a slotted spoon. Place beef in skillet and cook, stirring, over medium heat for 3 min. Divide beef and onion mixture among rolls then top with cheese and broil 5 inches from heat for 2 min. <br />
