Lobster Soup

3 tbsp butter
1/4 cup chopped fresh mushrooms
2 tbsp chopped onion
2 tbsp chopped celery
2 tbsp chopped carrot
1 (14.5 oz) can chicken broth
1/8 tsp salt
1/8 tsp cayenne pepper
1 1/2 cups half-and-half cream
1/2 cup dry white wine
1/2 lb cooked lobster meat
Melt butter in a large saucepan over medium-low heat. Add mushrooms, onion, celery and carrot. Cook and stir until tender, about 10 min. Stir in chicken broth and season with salt and cayenne pepper. Bring to a boil, then simmer for 10 min. Pour the vegetable and broth mixture into a blender and add 1/4 cup lobster meat. Cover and process until smooth. Return to saucepan and stir in the half-and-half, white wine and remaining lobster meat. Cook over low heat, stirring frequently until thickened, about 30 min. (makes 6 servings)
