Yogurt Bran Muffins

1/2 cup brown sugar
1/4 cup butter
1 tbsp molasses
1 egg
1 tsp vanilla
3/4 cup wheat bran cereal
1/2 cup all-purpose flour
1/3 cup whole wheat flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 cup yogurt
1/3 cup raisins (chopped dates, prunes
or apricots can also be used)
Preheat oven to 375°F. Spray 12 muffin cups with nonstick vegetable spray. In a large bowl, combine sugar, butter, molasses, egg and vanilla until well blended. In another bowl, combine cereal, all-purpose and whole wheat flour, baking powder and baking soda; add to bowl alternately with yogurt. Donít overmix; batter should be lumpy. Fold in raisins (or the fruit of your choice). Pour into muffin cups; bake for 15-18 min., or until muffin tops are firm to the touch.
