Chocolate Pound Cake

3 1/2 cups all-purpose flour
1/2 cup Dutch-process cocoa powder
1 tsp baking powder
1/2 tsp salt
2 cups unsalted butter, at room temp.
2 3/4 cups granulated sugar
1 tsp vanilla extract
1 tsp instant coffee dissolved in 2 tsp water
8 large eggs
Sift together flour, cocoa, baking powder and salt (or shake through sieve into a bowl). In a separate bowl, combine butter and granulated sugar. Beat at med. speed until batter is light and airy and colour changes from yellow to cream. Add coffee mixture and vanilla and mix well. Add eggs and beat until smooth. Slowly add dry ingredients and combine until batter is smooth. Preheat oven to 350°F and position rack in middle of oven. Lightly grease 2 loaf pans or one bundt pan. Cut out parchment paper to line the bottom of the pan(s). Butter the paper and sprinkle with flour (tap pan to remove excess flour). Bake for 50-55 min. Cake is done when tester inserted in the middle comes out clean.
