Fluffy turnip

2 tbsp butter (or margarine)
1 onion, chopped
4 cups turnip, cooked and mashed
1/2 tsp salt
1 tbsp sugar
1/8 tsp pepper
Pinch paprika
2 eggs, separated
In a medium saucepan, saute onion in butter, then add turnip, salt, sugar, pepper and paprika and mix well. Beat egg yolks and add to mixture. Beat egg whites until stiff, but not dry. Fold beaten egg whites into mixture, then place in 8-inch pie pan and bake for 20-25 min. at 375ºF. A tasty side dish for any main course.
