S'more Granola Bars

6 tbsp unsalted butter, cut into pieces
1/4 cup light brown sugar
1/3 cup plus 1 tbsp pure maple syrup
1/2 cup all purpose flour
2 cups old-fashioned rolled oats
1 cup graham cracker crumbs
1/2 cup sweetened coconut
1/2 tsp salt
1/4 tsp ground cinnamon
3/4 cup semisweet chocolate chips
1 1/2 cups mini marshmallows
Preheat oven to 350°F and place the rack in the centre of the oven. Grease a
9" x 9" square baking pan. Set aside. Melt butter, brown sugar and maple syrup in a medium saucepan over medium heat. Once the sugar has dissolved, remove from heat and transfer mixture to a large heatproof bowl. Stir in dry ingredients (except chocolate chips and marshmallows), making sure all are coated with butter mixture. Press about half of this mixture into the prepared pan and leave to cool, about 10 min. Once the mixture has cooled sufficiently, evenly sprinkle with chocolate chips and marshmallows. Top with remaining crust mixture. Bake in preheated oven for about 15 min. Remove and let cool for about 20 min. Cut into squares while still warm.
