Baked Potato Casserole

1 1/2 lbs potatoes, peeled
4 tbsp butter
1 tbsp milk
3/4 cup cheddar cheese, shredded
1 egg, beaten
1 cup onion, chopped
dash pepper
2 tomatoes, sliced
1/2 cup chopped, cooked bacon
Preheat oven to 400°F. Boil potatoes in salted water. Drain well, then mash with butter and milk. Beat in 1/2 cup grated cheese (save the rest), egg, onion and pepper. Spread evenly in a 9" baking dish. Top with slices of tomatoes and chopped bacon. Sprinkle remaining 1/4 cup cheese on top. Bake for 20-30 min. until base is firm and cheese is melted. Serve hot.

I LOVE this recipe! It's so easy to make and it calls for stuff that I almost always have on hand. To save time (and the mess of bacon grease) I used Maple Leaf pre-cooked real bacon bits and packaged pre-shredded cheese (mozza and cheddar combo). The only other thing I'll do differently next time is fry out the onion (which I minced, not chopped) first in a little butter until the onion is soft and translucent (I don't like raw, crunchy onion).
