Carrot Soup

Total Time: 30 Minutes or Less

1/4 cup butter or margarine
2 medium onions, chopped
1 garlic clove, minced
3 medium potatoes, diced
4 medium carrots, diced
5 cups chicken stock
1 bay leaf
1/4-1/2 tsp thyme
1/4 tsp pepper
Melt butter in large saucepan. Add onion and garlic; saute until clear and soft. Add remaining ingredients using 1/4 tsp thyme. Bring to a boil; cover and simmer until vegetables are tender. Discard bay leaf. Add more thyme if desired. Makes 8 1/2 cups.
